Colour: Pale Gold.
Finish: Long, Sweet and smoky.
Cask Type: Refill Bourbon Barrel.
Style: Fruity Islay Single Malt.
Aroma without water: Sweet Sherry influences with cured bacon and vanilla aromas. Tropical fruit notes develop with apricot, pineapple and ripe banana.
Taste without water: Initially chilli spice with pear, ripe banana and hints of passion fruit. A milk chocolate edge combines with lingering cigar ash flavours.
Aroma with water: Sweet vanilla aromas complemented by apricot preserve, almond and cocoa powder notes. A subtle hint of menthol develops.
Taste with water: Sweet and smoky with honey, green apple and ripe banana flavours complementing lingering bonfire embers.
“Caol IIa is a lively whisky, both peaty and full of flavour, without being as intense as its more famous counterparts. Its availability is limited, and with a name that is difficult to pronounce, Caol Ila has remained an almost secret Islay malt. The name, – pronounced ‘culleela’, is gaelic for ‘Sound of Islay’. The distillery is appropriately hidden in a cove near Port Askaig, overlooking the Sound of Islay, across which the ferry chugs to the nearby island of Jura.” – The Distillery
