Santenay Premier Cru Clos de Tavannes
Tasting notes Nose: Fine and precise, the aromas of red fruits mingle with light woody notes.
Palate: The most elegant of our first growths, of great complexity with a fruity and fine but present tannins that give it a good length.
Guard: Good to drink in four to six years. To keep maximum between eight and ten years depending on the vintage.
terroir Plot located on the edge of Chassagne Montrachet (1er Cru Morgeot) facing south.
Ground Clay and limestone.
Grape (s) 100% Pinot Noir.
Age of vines 45 years old.
winemaking After a rigorous sorting of the harvest, it is scraped and put in concrete vats. Cold maceration for ten days with pigeages and pumping over, then alcoholic fermentation for 8 days. After racking and assembling the press wine, the wine is put in casks.
Breeding Fully barreled (20% new oak) for about 15 months. The malolactic fermentation is done late enough to keep a maximum of fruit.
Production 6,000 bottles approx.
