Baiting Hollow Farm Merlot 2003
"Our merlot is gently crushed and fermented for 10-14 days to a maximum temperature of 88 degrees. The free run portion is drained off, separated from its skins and aged in hand-crafted, small French oak barrels (oak barriques), 20% new, for up to 18 months. BHFV's signature Merlot exhibits aromas and flavors of black cherry, blackberry and plum, underscored with slight accents of smoke and vanilla from the oak. The palate is rich and structured with sufficient but mild tannins and a long lingering finish.While exquisite and ready to drink now, it will age gracefully over the next 3-7 years." -The Winery
